Thank You For Smoking
Last week we finally found some time to get our smoker out and smoke ourselves some Tasso Ham.
For those who don’t know, Tasso is a very spicy Cajun recipe which we cure and smoke ourselves here at Otto. We love it, and we hope you do too.
First we have to cure the raw pork in salt and sugar:

Once this has drawn the moisture out of the meat, it is rubbed with a blend of herbs and spices – including cayenne pepper and marjoram – ready to be smoked:

Finally the meat is hot-smoked, which cooks the meat slowly, as well as imparting the smoky barbequed flavour:

The final result is delicious on its own, but tastes even better on a pizza with caramelised red onions and chile flakes. Be warned though, it really is spicy.
As I write this, the Tasso Ham has already sold out, but we’ll be bringing it back before Christmas.
